The number of hours displayed in the profile is totally incorrect and you should not take care of it (it also increases during active pause mode, and if you stop the console while MSFS is in active pause, it continues to count!). The number of hours that is taken into account is the one that is “estimated” in the statistics / success (if you have 50%, this indicates that you have 250 hours counted). This hour counter exists, but does not appear clearly anywhere in the statistics and the profile.
For the 500 hour achievement (and also for the 1000), the number of hours (percentage) increases in 5 hour steps.
Broken achievements are a problem everyone complains about. This is not specific to Xbox, new PC users also have the same concerns.
