NVMEs are great.
Mine are running on the Sonnet M.2 4x4 PCIe Card (Silent) which I had on my old Mac Pro 2010 (dual 6 core 3.46ghz 128GB ram). Even on that old machine it was blazing fast compared to the normal SSD.
I swapped that out and now use it in my current computer for Windows, one NVME is for Windows and FS2020 and the other is the storage drive for work or swapping files between Mac OS and Windows easily.
I’m similar attitude to the user before me (just above), I’m cautious on what I buy. I’ll spend $$$ if I have to, but it better be something that’s very solid and will keep going for a long time, that’s for our work use, but I have no doubt this thing should suffice for Flight Sim for a long while.
Maybe Apple and Nvidia might end their cold-war and we Mac people get NVIDIA graphics cards supported again…
The PC builds are tempting for gaming so I keep a watch on what is out there.
