ESC key is the default key that brings up the intermediate menu where you can go to controls etc…make your changes and save and then ESC again to get back into the flight.
On some aircraft you may need to reset the power levers coming back into the flight as they sometimes seem to go back to Idle, at least on my Saitek Yoke and Quadrant, even if the changes had nothing to do with these two controllers.
