No problem for almost a year, and all of a sudden …
MSFS no longer keeps my settings, and each time I boot it up behaves as if it was the first time I ran the simulation.
An idea ??

Maybe your UserCfg.opt file is corrupted?
Try to move UserCfg.opt from %LOCALAPPDATA%\Packages\Microsoft.FlightSimulator_8wekyb3d8bbwe\LocalCache to your desktop to force the sim to create a new UserCfg.opt. Maybe that will fix it.
Sorry to hear @bernard1954 you are suffering the same issue many others are currently facing.
The thread linked in the post above illustrates that the issue is not just confined to yourself.
