I used to fly like that before i got my current setup. didnt notice anything performance wise that accounted to the external SSD. If you use a USB 3.2 gen2 shouldnt be a problem at all.
As to your quastion about splitting: If you use an addon manager like this one you can put your mods on another drive and let the program create symlinks and it would work!
