After you have deleted your rolling cache, to recreate the rolling cache, I believe you have to set a size (in GB) for the rolling cache in the “Rolling Cache Limit (GIB)” textbox. And then click the “Apply & Save” button on the bottom, and MSFS will create the rolling cache again. If you just delete your rolling cache but don’t recreate it, then MSFS won’t be using rolling cache.
Be careful of the size you set for rolling cache though when you create it - if you set a very large value, it will take a long time for MSFS to create it. I am really short on space on my SSD, so I set my rolling cache to 6 GB or so and MSFS created it rather quickly. If my memory is correct, I set it to about 10 GB before and it was also created fast enough. But I think I set it to 50 GB once and it took forever to create.
I’ve got the same problem, but over land, not over water.
The magic threshold seems to be 1350 ft. Above, everything looks fine. Below, strange textures are appearing in a certain area around the plane.

This was occurring in WU5. When I get to my desk I’ll link you some videos from back then with this exact issue. It’s not an SU5 thing. These were uploaded on June 18th.
I also have the same problem with water textures, when flying at low altitude (500-1000 ft)

When you fly around Toronto City Centre Airport (one of your Asobo upgraded airports) all of the watermasking is screwed up. You will see triangles all over the water all along the shoreline and around the airport. I have no mods in my community folder and this started after SU5.
The scenery was never really great for the Toronto region. But i also too noticed the water textures looked weird. They need to update this area of the map, as it still shows the ACC when it is no longer called that.
I know this is an old topic, but I’m having the same problem as the original poster. Mainly around Honolulu Hawaii. Did anyone find a fix? I’m running SU6.

All my water surface display is unstable, changing frequently between normal display and a wrong texture display as below:

iI’m facing strange water surface display ( look at 4 very short youtube video ). Before that all was working fine, very pleasant.
That’s happen each flight as soon as my plane is overflying or approaching water surfaces and only water surfaces. Any altitude
Sometimes it is normal display and suddenly bug appears during few seconds but sometimes during one or two minutes. When that’s happen if I change aircraft heading it may disappear and display normal water surface but sometimes not.
Tested all graphics parameters options downgraded from Ultra to High or from High to Medium or Low but display bug is still there.
Deleted Rolling Cache file and created a new one …still bug
No Manual cache
My hardware configuration
AMD Ryzen 7 3700X, 32 Gb Corsair DDR4 3200Mhz, CGU Asus RTX2070 super 8 GB , MSFS on M2 NVme Crucial 1Tb. Display Huawei 34" 3440 x 1440 DP connection to CGU ( same issue with LG 27" 2560 x 1440 )
Nvidia driver 472.12. MSFS Windowed mode.
Sent a ticket to ZenDesk but 18hours later it was reported “SOLVED” without any indication/message etc…

Today during a flight from LGAT to OLBA, after take off, over the sea at 5000’ it was a mess
When arriving OLBA at 5000’ no more problem
Unable to find any explanation about that !
And as ZenDesk say it’s “Solved” without any suggestion…
