Something in the 200 to 260kt range would be nice. Goes without saying that full IFR capability is a must.

Vashon Ranger R7, an all-metal high-wing tricycle gear bush plane in the low ‘light sport’ price range, with a very “spare” interior but a full modern glass panel, as well as a more traditional Continental O-200-D engine versus that newfangled Rotax kit the LSA kids like! 
Unlike the many Garmin planes in the sim, this has a Dynon SkyView panel, available in several sizes/options. (Not coincidentally, the founder of Vashon also founded Dynon.) I’d love to see this properly simulated and be able to learn how to use the different avionics.

I love the mb 339 for that sort of speeds and has smoke tanks for a bonus, it’s the most fun plane in my fleet in my opinion.

Helicopters, flight sims need helicopters, they shouldn’t take a back seat in the industry considering how influential they’ve been in aviation and the world for the last 70 years. Aviation is more than just planes.
Gliders would be cool too, they’re ultimately the original airplane.
Regarding fixed-wing powered flight - How about more GA Planes, Biz Jets, more Regional Airliners and Island Hoppers, authentic 60’s-80’s era military fighter/attack aircraft would be cool too. I’d love to fly a low level, do some VOR nav and shoot an instrument approach in a T-38a, F-4 Phantom, A-1 Skyraider or something of the like.
Military Cargo jets would be cool since they’re so uncommon in sims (quality ones). Gimmie a C-130 (old and new variant), gimmie a C-17. Just for the nevelty factor - not a huge long range flight kinda guy.
I don’t like sitting up in cruise FL360 on AP for more than 1.5hrs. Gets old after a while and is pretty time consuming. Although if time acceleration were to work well (not sure if it does, hard to code well) then I’d consider adding long range wide-bodies like the A350 or 787 to the list.
