What’s your budget? That’s the key question. If budget doesn’t matter then get a ryzen 9 5950 X
I would buy an AMD Ryzen 9 5900X processor. What are your opinions?

It all depends on what you plan to do with the system.
If you’re only going to be gaming / running MSFS; please just go for the 5600X. Games and sims will NOT utilize all those extra cores you get on the 5900X / 5950X.
If you’re also planning on doing productivity workloads (modelling, video editing) on the system, then it makes sense to step up.
There are way too many people complaining here that their Xeon/3900X/10900K isn’t being utilized by the sim, and they blame Asobo, while they simply bought the incorrect CPU for the workload they’re going to throw at it.
@MortThe2nd is absolutely correct. Also If you are going with a new Ryzen I would think about also going with a Radeon 6 series graphics card as that has some pretty big benefits when paired with Ryzen instead of with Nvidia.
