Why do major bugs only appear after Sim Updates, not discovered in Beta Testing?

But we have - there were updates that arrived the day the beta became the final release. There was an update to MSFS itself, then in-game the Premium and Deluxe packages had an update, and, I believe almost all of the World Updates got updated. I remember seeing the Canada WU update hoping photogrammetry was fixed (it wasn’t). So, there was a lot of new code that day, in spite of the version number remaining the same as the Beta 1.31.22.0

And, more to the point, the behaviour changed with game-stopping bugs that only became evident after final release…

If there was any indication of a game-stopping bug being in the final release, the release should have been paused to fix the bugs first. In-game bugs will always be there… but the ones that prevent using the software really should be priority.
