Some of the weather issues might be related to loss of data from the server, but I found one location in Mexico where you can see the wind injection turn off/on just by flying north of a specific point, then turning around and flying back south of the same point, which does seem to indicate an in-sim bug.
I was able to repeat this on multiple flights on different days and times.
