I need to do a fresh install of Windows 10 on a new ssd, I’m having many issues with it. Most of my scenery/airports (I have a lot) is installed on other ssds, not my C:\Windows drive. I’m not sure what process to go through to re-install MSFS2020. Do I need to un-install MSFS2020 first? Do I have to re-install all my airports as well or can I just point MSFS to the ones I already have installed?

This is what I would do:
First, cut and paste your Community Folder with your addons somewhere safe.
Next, from Windows Apps & Features, find Microsoft Flight Simulator and click uninstall.
After the uninstall is finished, delete any remaining folders.
Restart PC.
Install MSFS 2020.
When the install is finished, and the sim runs OK, delete the new Community Folder and replace it with the old.
