My Official folder is 348 GBs. I have a blank 500 GB SSD to put it on. This will free up all that space for the future on my MSFS SSD. Can I just cut it and paste to the blank SSD? OK, I can now declare this topic is solved. The problem was, as I expected, I had not deleted the Official folder in the E:\MSFS Stuff\ folder after copying and pasting it to the D:\ drive.
