If any of you are experiencing the weather auto resetting bug here is how you fix it.
Have someone without the issue create a group and invite you. Have the group host set a random preset time/day, go into a flight, then you exit the group.
To avoid the issue re-occuring make sure to exit the group before exiting the game.
