Will there be any visual difference if I choose a GPU with 8GB or 12GB Ram? And how big of a difference in performance is there between the diffent Gpu’s (3070, 3080, 3090)?

It depends on what resolution you’re playing at. The GPU model matters a fair bit for higher resolutions. At 1080p all three are more than enough, at 1440p the same is probably true but the 3080+ is better. At 4K I personally wouldn’t want less than a 3080.
The amount of VRAM required also depends on the resolution.
I’m currently running in 2560x1440 as my primary display, and intend to keep it that way, but considering getting a 4K TV for some casual playing once in a while. So I guess I will be looking for a 3080+ and hope the prices will start to drop soon (although I doubt it).
