Brief description of the issue:
While climbing in the A320 the engine sound suddenly changes and the speed ”jumps” like 40 knots in either direction (keeping 320 kts and next second getting overapeed at 365 kts, but can also go from 290 to 250 kts). Provide Screenshot(s)/video(s) of the issue encountered:

I wonder if this is just passing from one “cell” to another of live weather with significantly different wind speeds. I’d say try a flight with spec’d out calm conditions and see if you still get it.
The problem is also with CRJ of Aerosoft, the aircraft speed go back suddenly and then go up, I think that the problem is not related with the weather.
I have a hunch this is caused by the sim switching from live weather to some default setting on its own. While flying, the OAT would go from -3 to +22C at 16,000 feet in a moment’s notice while the airplane moves all over the place when the temp changed. It did this to me about 2-3 times in a 10 minute time period.
i agree with you. it seems like the plane is reacting to a major difference in atmosphereic conditions. it changes about 40-50kts when it kicks my plane around.
Pay attention to the OAT. I saw in the A320 that the OAT was completely wrong because of the live weather. If the OAT is wrong the performance at the flight levels will be severely impacted.
