A320: What happens to VNAV when using manual heading mode?

I almost exclusively fly the Fenix A320 and have question regarding VNAV in general on the A320.

Obviously you can fly an entire set route with SIDS and STARS using VNAV and LNAV but that isn’t always realistic. It’s common to go into manual heading mode to be vectored to various headings during an approach. In the real thing when using manual heading mode what happens to VNAV? In the Fenix it seemingly ends and moves over to manual vertical speed setting. Is that how the real aircraft works? If so how to pilots work out their vertical speed so they don’t end up too low or too high?
