(Xbox user) I know ini is considering the option of doing engine variants like pw etc. you could also have a version of a320 equipped with the old winglets, right now we have the sharklets. Kind of like on pmdg we have the versions equipped with the scimitar winglets and the other version. For me it would be more something to have visually since I like that old winglet shape, I guess the engine changes as well and basically it becomes a ceo but it would be nice to have a choice to have different views from the passenger view and to do certain routes.
I think this can only be achieved through an addon creator, by making a “fork” of the A320 Neo cockpit into the A320 CEO fuselage. The entire system logic would need to be redone, as the A320 NEO uses a new system logic and additional resources (if it’s only for the external fuselage, it might work too). If this happens, it will likely be restricted to PC, as it would conflict with Inibuilds’ product (third-party modification authorization, which would not be allowed in the Marketplace without authorization), in my opinion. And I don’t believe this will come from Microsoft/Inibuilds.

I agree with the previous reply, since it is a MS published addon, it’s an Airbus licensed addon. And I don’t think they will be allowed to do such modification. Even the PMDG examples you provided are actual airframe options of the 737ng family.
So, if at all, only for PC via a 3rd party mod. Or may be just may be hypothetically for Xbox via a 3rd party mod who can sell it via marketplace.
But since PC has no lack of a320 CEO options (2 options) and both are proper CEO model with correct engine options, and one of them is also available for Xbox, I don’t see it happening. The actual CEO on the other hand can very well have the option for “sharklet” winglets since it is a legit configuration that real world airframes had, wizz air for example.
And I don’t think ini is considering CEO engines. AFAIK, they may make the PW GTF engine which is NEO only.

No, what you currently see on the Neo(s) are already the CFM LEAP engines. iniBuilds will also make the Neo version with P&W engines at some point.
Also I think you are somewhat lost in A320 versions: the A320 Neo is not a random A320 model with sharklets, it’s a completely new aircraft in many aspects which just can be flown by A320-200 (CEO) pilots with minimal additional training.
The A320 Neo never had wingtip fences, has a different tailcone due to a different APU and also other smaller or bigger adjustments to the airframe.
However mix & match of different aircraft types won’t be done by iniBuilds/Microsoft, especially not under licensing from Airbus. For this you will have to use latinvfr products which are basically what you are looking for: classic A320 variants build out of A320 Neo spare parts 
for the PMDG 737 the options for different winglet styles also only exist because it’s really an option on these otherwise similar airframes.
Also something to note: there won’t be any classic A320 build out of the iniBuilds A320 Neo as the files are encrypted.
