Do the aircraft carriers have a catapult option for take off? I would like to launch the jets off the carriers.

No, default carriers shipped with the Maverick DLC don’t feature catapults and don’t drive around in free roam right now.
You basically need mods to use them outside of missions if you are on PC.

■■■■! I was hoping to see what piece (or pieces) of a Cessna 172 actually made it off the end of the carrier following a catapult launch…

The Indiafoxtecho Goshawk and F35 have their own catapult code linked to activating the launch bar.
If you’re on pc there are options such as the touching cloud kinetic assistant and super warrior plus some others.
