Not sure if this is a weight balance issue or something else but on decent and approach as soon as I add flaps my plane will trim down to 100% and it will seem like I just float and actually start to gain altitude uncontrollably. It’s extremely frustrating. It happens to me on the A320 and B787.
Welcome. I would check your controller assignments and make sure your flap switch isn’t also assigned to trim functions as well. Conflicts can cause havoc.
I don’t fly the airliners but I haven’t noticed this problem on the forums.

I have the Thrustmaster T.Flight Hotas One flight stick and the key bindings are different. If I to manually trim up I’ll start to go into a steep climb
Looks like the flight model is set to LEGACY instead of MODERN.
Unfortunately your screenshot doesn’t show the IAS, this would help in figuring out what’s wrong.
You don’t trim in the A320. If you try, the FBW system will re-trim as soon as you stop trimming.

The completely wrong pitch down and lift increase with the modern flight model is still there when going from 0 to 1, but it’s much less pronounced and managable.
