Greetings!
I know Steam exists for many different platforms and/or operating systems.
For example, Steam exists for both Windows and Linux, (Linux Mint, for example). Therefore, if I buy a Steam version of MSFS, can I play it on a non Windows/non X-Box environment? (i.e. A Mac or a Linux box, assuming that Steam is available for that platform.)
I already have the PC version bought direct from the MS Store, so I’m not desperate, I’m just curious.
Second related question:
Performance and bug-wise - does it make a difference if you’re running Steam or not? Is the game better or worse in Steam?

It’s the same game. Steam is just the launcher for the same thing so the main game files will still be managed by the Microsoft servers.
And it’s only intended to be run on Windows PC’s.
Bootcamp on Mac may work I suppose but the performance will likely be terrible and I think it largely works via Proton on Linux (it has a Silver rating at least) but I have tried neither.

It can run on Linux with the use of the compatibility layer „Proton“ - I managed MSFS to run on the Steamdeck which is Linux based (Steam OS 3.4). However it refused to use the online functions - so very basic flight sim experience, but there are instructions out there to get even that to run, I never tried though, so I can’t tell you if it works.
TL;DR: it can work on Linux.
