I’m trying to figure out if there’s a way to see passengers other than the co-pilot in any default aircraft.

Default aircraft? No.
The P.149 does, and several others do, too, if you add weight to the seats.
I haven’t checked recently, but back a bunch of versions ago, seeing passengers while in the plane broke in the P.149. I don’t know if this has been fixed, or if there’s a mod which fixes it.

No default airplanes have this feature, no. Many 3rd party paid planes do, though.

You can have passengers in the freeware mod for the C172 - G1000 made by bagolu. It’s kinda default.

GSX is supposed to have an update in the future to where if your plane has a full interior, the passengers that board will sit down in them.
