I’m thinking of having my brother as a co pilot 2nd officer, and me as the captain flying a plane at the same time. Would it be possible to run two

Doubt it, at least not easily. I’d expect assigning the flight control inputs to two different devices would just create conflicts.

You’d need a way to tell the sim which set of controls has command, and as far as I know that feature doesn’t exist. Might be possible to accomplish it with one of the third party tools like FSUIPC but I’ve no experience of those.

Edit - just seen this is tagged xbox, which makes it even less likely.
