I know you can map a button to disable AT each time it comes on but is there a way to just shut it off completely so it never engages?

Switch AP to manual instead of FMS and you can turn it on or off as you need and set your own speed target.
Could you please explain that to a novice please? “switch AP to Manual”.
Set up my lovely first approach then could not reduce thrust..
My response was to the second part of the question. The autopilot panel has a switch to toggle between FMS and Manual. Outer knob of speed dial.

Auto throttle irritates me to death while using AP.

I don’t want it. It is crazy.
It just wants to push the throttle to max.
There is no way to disable it.
Disconnect does stop it but it comes back.
I just don’t get it that a RL pilot coming down on Glide Slope
would want the Auto throttle to jam the throttle to max.
It sounds like you’ve gotten too slow and entered the envelope protection area. Just remember that Vref is the threshold crossing speed, not your approach speed. Keep a bit of buffer on top of that.
