Is it possible to stop an update download once it has been started. I see that it can be Paused but what if I want to cancel it?
If you would cancel it, you couldn’t use MSFS anymore.
Uninstalling should work.
quit the application. the next time you start you should resume at the file you where downloading

I was more interested in Canceling it altogether. I thought I had made a mistake and it was downloading 172GB. I decided to let it continue. Everything turned out OK but it took several hours and no flying. It seems like there should be a Cancel Button

Not possible because this is an online Game (even when you play single player). you need the current version of the game to access all the online data.
