Just to clarify the Cowan Simulation is a Mcdonnell Douglas MD 500e variant. This is a full size, jet powered rotorcraft.
A M500 (mini 500) is a piston (oops TURBINE) powered kit helicopter. GotFriends makes this rotorcraft.
Yes helicopters are “twitchy” if you don’t stay ahead of the helicopter. You’ll learn the muscle memory and won’t need to react as much once you get the “feel”. Just takes some seat time. Adjusting your sensitivities will help you as well.
