Same problem here, just started today, only it always jumps to 08 Sept 20:45 (UTC) and Live-Weather. I tried all different combinations to no avail. Only thing to get rid of it was to disable online functionality .
(Using steam version, everything up to date, no add-ons)
I completely reinstalled, and the problem persists. So it really seams to have something to do with the account.
My theory is that it has something to do with multiplayer. I just remembered, that at the time it always resets to I was flying in a multiplayer group with a friend of mine. My friend was the group master/leader, so my system was synced to his time/weather settings. So maybe my system still sticks to the last settings from this group flight. I will try to challenge this theory by doing another group flight as soon some of my friends are available.
My theory was correct. Solution: Let friend invite you to a group, accept group, leave group → Problem solved.
Meanwhile I found this post, describing exactly this procedure: [XBOX] Weather fix - when it auto resets/defaults
