Remember my tail number so that each time I re-start the simulator I don’t have to be annoyed when I realize I forgot to set it when creating a new flight.

Agreed! Even FSX did this!
i was just thinking about this.
let us save a default tail number and call sign !
or if anyone knows an easy workaround, i’m all ears. 
I’m sure it will be addressed at some point…
