FPS drop CPU/GPU utilisation drop

When I start the sim I see around 50/60 fps and After 2 hours or so it drops to like 15fps.

Exactly the same for me, after playing a few hours, FPS drops from 40 to 5FPS or even lower. Playing on high. Ryzen 7 3800x 32GB RAM RTX 2080 Super 8GB VRAM 1 TB Nvme gen 3 600 Mbs wired ethernet connection No AI aircraft, just opened a ticket to Microsoft
