The G3X Fuel Pressure (PSI) gauge on both XCub & NXCub is showing an incorrect value.
Expected behavior: Fuel pressure would match between the two screenshots posted by OP.
Actual behavior: Fuel pressure setting is different between screenshots.
The fuel pressure gauge is working - pulling the mixture back to zero to cut the engine will drop the fuel pressure PSI to zero, as expected.
The fuel pressure gauge in the G3X in the JMB VL-3 matches between the same two screens & is operational. Increasing the throttle will increase fuel pressure, cutting the engine drops it to zero, as expected.

Note the two different values in these two screenshots - 8.0 vs 28.0. Because the pressure drops to zero when one cuts the throttle, this suggests that there may be a “typo” in the PSI calculation code for the fuel gauge in the first shot that is causing it to be ~ 29% of it’s true value (in the secnd screenshot), so causing it to show in the red area.

The mis-match is still visible in V1.37.4.0:

The first pic shows the fix listed in the release notes:
“Fixed the color of engine gauge text labels when the gauge value is within a red scale range.”

In the NXCub, fuel PSI on the left side is stuck at 8.0, while on the engine page it’s 28.0. Haven’t tested other G3X aircraft yet but I assume it’s the same across the board.
