What is the simplest way to create an altitude and heading lock using the G 1000 without a flight plan?
You can simply enable Autopilot with the AP button. Then press the HDG button and it’ll lock to whatever heading the heading bug (blue marker on the compass) is on. You can change this with the HDG knob. Finally you can lock altitude with the ALT button.

Use The VS, use up and down nose to set the climb rate, when you reach you altitude hit ALT.

If you set an altitude before you activate VS it will alutomatically transition for you

I was getting horrible results with this for a while. Turns out autopilot hates active pause. Noted 
The game keeps simulating when you have active pause enabled. You have to bind pause on and pause off to actually freeze the game in-time. See this thread for details.
