I found some old forum posts about this and ultimately I read it had been resolved but I just got the alpha yoke and am experiencing it. Any guidance will be appreciated.

This is occurring in the 172 and not the 308. Haven’t tested any other planes yet.
I have this problem In the 172 Gargo configuration only. All the other Cessna 172 Skyhawk configurations it works as it should, with 1 degree movements if you rotate the Bravo heading adjust knob slowly. If you turn it rapidly, it will jump some numbers. Turn it slow and all is good. There was an issue with 10 degree jumps in the early days of MSFS2020 but it was fixed, and then worked as I described above. The 172 Gargo is the first one at the far left of the configuration listing. I have not noticed any issue with 10 degree jumps in other planes yet. This seems to be a bug in this specific plane.
I have noticed it in the C172 and PC12. If you use the knobs in the cockpit with the mouse they work normally.
I have also seen in the C172 that sometimes it decides to move by one increment such as after being on the heading with AP for a while but then randomly will go back to 10 increments.
There are work arounds but this looks like a bug to me.
I was having this problem too. I read in an old post about msfs 2020 that the avionics master 1 and 2 were the problem causing the 10 degree increments. I went to the key bindings for the avionics and turned the input repetition off for both avionics 1 and 2 (including the off positions). This fixed the problem for me. Hope it helps

Yes, the new C210 has this issue with the honeycomb as well.
