I recently built a gaming PC and added three 50" 4K 60Hz screens, clearly I knew nothing but being retired it was fun building it I guess 
Anyway, In FS2020 I can only run the screens as a 2K-4K-2K triple with only just about 30FPS avg on my i12900K/RTX3080ti PC.
I recently tried to add some driving sims to my fun but found the system totally lacking and unable to give a smooth experience which really gave me eyestrain/motion sickness.
Can anyone recommend a triple monitor setup that I can run to give me great performance in both flight and on the road?
It seems that even in 2022 most are still running 1440p 32" screens - is this the way to go for me??
Before I go any further I will be clear and state I have no experience with multi screen setups.
32” screens running at 2k (1440p) are generally regarded as a good sweet spot for pixel density really. However, that is quite a drop down in size if that matters to you (no pun intended!).
I assume you have tried lowering graphics settings to gain performance? Sometimes lowering a few settings may not drastically reduce what you see on screen, particularly for higher paced action like racing where you are generally quite focussed.
I am biased, but I would also consider VR… but realistically you may well need to compromise on quality more for performance sake. That said VR does provide an experience that cannot be replicated in 2D.
The feeling of being inside a cockpit aircraft or car within the environment is something you can only appreciate by trying BR for yourself.

i did try VR with the Reverb G2 but the poor image quality and low frame-rate on the 3080ti made it unworkable for me so i sent it back, the 3d immersion was brilliant though. I think the only I might get VR would be with the Varjo Aero and a 4090 GPU but thats all silly money.
I tried lowering settings in the racing sims but it still stuttered and struggled on fast parts, possibly the higher latency showing maybe? In FS2020 I can get by ok most of the time but really want to expand my sim fun now.
Strange I have a 10900k and only running a 2080Ti but can get an acceptable experience in MSFS and do not recall any problem in racing sims - not that I use them that much. Assetto Corsa is probably what I use most.
It does work, reasonably well in FS but not in racing it seems.
I’ve spent most of the day researching and it really does seem that 32" 2K/1440 is the sweet spot and totally workable on my setup.
The physical size won’t matter so much as the FOV is the same providing I can get them mounted at the proper distance, about 60cm from my head, it should have similar FOV as the 50" screens then at a distance of 83cm
I have 3 32" curved. They’re perfect. The center is about 30" from me. I tried the multi-screen setup but didn’t like it so they are now in normal edge to edge. Until recently they were about 10" further back but it was difficult to read instruments, even zoomed in.
