Since the update last week I’ve been having issues with the game’s configuration. Is there a way to turn off and delete the cloud based controller and configuration data? I’ve been using 2 computers (1 for modding, 1 for gaming), I want to get it straight on at least one machine to isolate the issue.

I know of no way for users to switch cloud save data on & off, but it can be deleted.
For PC users:
How to delete a cloud save on PC to fix some loading issues or reset the logbook.
Warning: Deleting the cloud save will wipe your logbook permanently as well as custom control profiles and all settings. You will not lose the achievements already unlocked on this profile but progression towards achievements and the logbook information cannot be recovered.
Are you referring to the profiles in the Control Options menu? Not sure this works as it may be saved locally rather than in the cloud, but select the one you don’t want then delete it from the Options Manager (bottom left).
Deleting all custom controller profiles, back to defaults, would be better than wiping the entire profile. IIRC you can even “default” the defaults.
