It goes away when i am in another Applikation like the browser.
But when i fly its always there… Theres a Pin Button but it does nothing.
The fact that it displays all of the time is a bug that was introduced with SU5. Fortunately, there is an add-on to address the problem: No Handle Bar » Microsoft Flight Simulator.

by default you can press the up arrow key - but first disable the other function it has (raise cockpit viewpoint)
In fact you can press any arrow key (up, down, left, right - at least with the default keyboard profile set in FS 2020) to make the menu handle bar disappear. Yes, it’s a workaround (the handle bar should disappear by itself after a while, as it did before the SU5 update), but doesn’t require any addon (the addon may still be genuinely useful if you always want to hide the menu bar handle).
Yes, but you have to repeatedly do it every 5-10 second during the entire flight. So that’s not a bug but a mini game within a fly game.
It DOES fade out when your cursor is on the minimap, interestingly enough.
