The only folder I’ve heard people say you should (?) delete, move or rename is the community folder. Though if there’s nothing in it then I guess that’s moot.
To be honest, you shouldn’t have to delete anything. The installation of an update should take care of everything.
Don’t delete anything, it’s recommended to just rename your community folder during the upgrade process to ensure nothing conflicts, but isn’t a hard stance.
If you want to be cautious, just rename it to community_old
Launch the sim, do the update, shutdown the sim, delete the new community folder it created and rename community_old back to community.

Please see @skypilotYTS’s post above about renaming your Community folder. Note that even this isn’t strictly necessary. You can certainly install SU11/40th Anniversary Edition with all your same mods/addons enabled. However, if you do encounter any issues, your first troubleshooting step should be to disable all your addons before reporting the issue as a bug. Many times, problems that players think are a bug with the base MSFS code are actually caused by an issue with a mod. If that happens, try disabling your mods and then re-enabling them one-by-one to determine the source of the problem.

I always cut out everything from my community folder to another folder on another drive. After updating and testing if sim starts normal, put back everything in community folder. I honestly dont know if this is needed to do, but I got used to it already
No real need to remove, or rename anything before an update. Doing so is more of a feel good thing, than something that provides any real benefit.
I only do the community folder step if I run into issues after an update
I always make sure I run a Windows update prior to updating the sim. That’s all.
I think it’s recommended you also delete your cache (if you have one) before actually flying. I usually switch the cache off in settings and then switch it on again.

I did a complete uninstall of FS 2020. For some reason, my FPS (under SU10) dropped to less than 15 FPS from the mid-40s. I couldn’t figure out what the problem was, so yesterday I decided I’d remove it and do a fresh install today using SU11.
Long way around to (hopefully) fix my problem. But it is what it is.
I run a Windows and X-Box update EACH TIME before I FLY!!!
