Having currently using the 2700X, I say it isn’t great for FS2020. The 6-cores Ryzen 3600 is better, heck even the 4-cores Ryzen 3300X is better.
RAM: go with at least 3000mhz with Ryzen, diminishing return at 3800 or faster.
GPU: Techspot rate Radeon 6800 being 9% and 14% faster than 3070 at 1440p and 4k respectively. However if you play other ray tracing or DLSS games, or plan to use their NVENC encoder for streaming, maybe you might want to go with Nvidia.
Maybe FreeSync wouldn’t work well below 48fps on some monitors, not sure about that.
