I found the download and install process a little confusing. During the install I was given the choice of GE or RR engines. However, after I selected it said neither was installed. In the a/c I have very nice engine sound, so something was installed. Anyway for me to determine what engines are in there? I examined all the files in the Community folder but didn’t find anything.

You get these engine sounds from FTSim+.
The engine sounds on the Kuro 787 if you don’t have the FTSIM+ sounds installed are the sounds from the base 787-10.
Is that the same as FlightSim.to? FlightSim.to is where I downloaded the a/c from. They do not have a separate mod for the engines. I think there must be a way to select and install one or both of the engine choices with in the install material, but I can’t find it–if it exists.

Found what? Those engine sounds are from a payware pack. @HamMan2118 described the needed pack.
