I am seeing very few AI aircraft (not Live AI). Using Little Navmap as a guide, I see occasional AI aircraft in flight, but not in the sim. ATC asks my copilot to report traffic and she always see them, but I cannot.

It’s unrealistic to expect to be seeing aircraft buzzing about you like flies. If they were that close they’d be too close. If ATC was to be believed however we should be nose to tail if the proximity warnings were anything to be believed.
As @meh1951 posted sharing my topic from last night, I’ve actually seen a sharp increase in live traffic in the past couple of days. I don’t know when it started for me, but I noticed it over the weekend when I really had more time to fly. I fly some familiar routes on a pretty regular basis, so I’m typically aware of what traffic numbers to expect on them, and everywhere I’ve flown (granted, all in North America), traffic has increased.
As an example, in that image, I was just passing over Miami at 8000ft. All these planes were in the air around KMIA, KOPF and KFLL. Normally, I’d see 3, perhaps 4 other planes in the air in that general area during this time of day. There were about 15 last night. That’s a significant and noticeable increase.

In Europe, it can be quite sparse in certain places and you can be flying for an hour before ATC acknowledges another aircraft
I missed that in your original post as I mentioned in another post above. You’re talking about AI traffic. In my case, it’s real time live traffic. I don’t use AI traffic at all. It tends to rob me of too much performance.
