I live in Germany. If I go on holiday to ..say Denmark and the summer house I rented has fast internet, will I be able to log into my Xbox account from a danish IP?
If so… I could take my Xbox, joystick, HDMI cable along and do some holiday simming.

Yes, you can!
You can log into the sim on any device.
The caveat is though, that you can only be logged into one device at a time.
You can also make use Xbox cloud gaming if you have game pass Ultimate. Find out more here
