I have been using FS2020 on xBox game pass on my PC for a while, but I wish to purchase the product (via digital key) and then cancel my game pass. Will I lose my add-on’s upgrades purchased via the FS Marketplace?

I did what you are proposing and didn’t lose anything. All my bindings and purchased addons were saved.
From previous experience where I’ve had other games on Game Pass that have left Game Pass, prompting me to purchase the game: I have lost neither dlc nor personal settings.
