Can i interrupt the download from the msfs2020 and continue it on the next day?

It worked for me, I had to download over 2 or 3 nights, just make sure to hit pause and then quit the program after a few seconds.
you can even test to see if it works for you, by letting it download abit and noting how much left you have to download, quit out and open again and see if the number is the same or if it reverted to default again.

Yes you can pause the update and exit the program. It will remember where you left it
