Is that addon aircraft or base game ?
B787-10 default with Heavy-Division/B78XH mod.
Have you tested with A320 or vanilla 787 without mods?
Add-on liviries are also known to cause problems.
Suggest to try with an empty/renamed community folder.
You have to flick the switch marked Chemtrails on the upper overhead panel in order to get them working.

I fly the Working Title CJ4 and see the contrails just about every flight. Maybe give that aircraft a try?
The only weird thing I have noticed about contrails is, if you set the sim rate to higher than normal, the contrails move way back, to the point that they almost don’t look connected to the plane anymore.
