I’d like to buy my son a midpriced PC , he plays MSFS and mostly is into music production.
I’m thinking 12700 3070 or 3080 and need it to last 3 years at least …
any recommendations ? thanks
1440p res = 3070; 4K = 3080 is my recommendation

if you want to run on ULTRA resolution, even on a 1440, the 3080 will work better. It depends on what settings you use. The 3070 will be fine for High-End settings at 1440.

My system with Cincbench 23 12000 rated CPU with RTX 3070 Ti is CPU limited functionally all the time in MSFS with default Ultra setting at 1440p, with high glass cockpit refresh rate and almost all online functionality on except for multiplayer and photogrammetry (which I find looks ugly too often) and the graphics card at basic stock clocks.
12700K (one of the most powerful CPUs on the market, definitely not mid-priced, but your son´s music demands might be dictating something there) is more powerful than that, but frankly at those times at which it matters most (busy large airports, particularly with offline traffic at max settings) I´m certain you will still end up being CPU limited even with 3070. It´s sufficient for 1440p Ultra. At the less CPU demanding times the 3080 would probably help the 12700K squeeze few more frames, but we are already at 60+ FPS category here and MSFS in general does not need super high FPS.
On second thought, since you mentioned prebuilt, you probably mean the more basic 12700F (which might be further throttled by cheapo mobo on prebuilt). I actually doubt you´ll even see significant difference between 3070 and 3080 on that one with MSFS at 1440p.
