So yesterday ATC told me to fly a left downwind for 18R at Barajas.
This is the runway layout
Could someone explain to me where I should fly this traffic pattern? Is this all the way to the right of 18L, and then a left base perpendicular to 18L and then 18R to final? Or should I fly in between the runways?
Where could I find more information about these more complex traffic patterns? I mostly find information about the simple single runway patterns.

This is one of the areas where the sim’s ATC is lacking. In the real world, you would be getting a right downwind to 18R so you aren’t interfering with traffic on 18L. Since the sim’s ATC instruction is not ideal, I would fly the left downwind at whatever distance is appropriate for the speed of the aircraft you are flying and ignore the fact that you are crossing the 18L approach path on your base leg.

Exactly. Let’s assume the bottom runway is 18R. In the real world you wouldn’t be flying within 18L’s protected airspace. But that is exactly what the sim’s ATC instruction had you do by giving you a left downwind entry. Left traffic is the normal standard which is why the sim had you enter the pattern that way. I don’t think it knows about right traffic patterns.
