Getting ready for AM5 build and curious about RAM sticks. Going with 2x32GB sticks and I remember early on, 6400MHz was unstable. Is this still the case and/or would it still be better to go with 6000MHz?

6400 will be best, especially if you go with a more high end motherboard with a current bios. AMD has come a long way over the last year or so with tuning their AGESA component to be more memory friendly. The AGESA component gets integrated into every AM5 bios across all the motherboard vendors.
I’m currently running DDR5-8000 memory (overclocked) which a year ago would have been nearly impossible to run without these bios improvements. DDR5-6000-6400 is pretty much the accepted sweet spot for AM5 memory so you really can’t go wrong with either one. I would just recomment to get no more than 2 memory sticks that have the best CL rating as this helps with reducing mico-stutters (the 1% lows).
Was leaning towards 2x32GB 6000 CL30. Would this (or 6400) be fine on a B850 mobo?
With an X3D CPU (highly recommended for FS), the difference is negligible. 6000 MHz is the sweetspot.
As I mentioned above, either one will work great. Just make sure it’s on your motherboard vendors QVL list to ensure compatibility.
I’m finding myself CPU bound at 25fps more than I’d like on a new 9800x3d 64gb 5600 MHz CL40 system, would upgrading the ram to 6000mhz CL30 likely make much difference?
It’s hard to say so I’ll let others comment that have done this upgrade. Have you verified that you have your EXPO/XMP profile turned on in the bios?
