I am finding that MSFS causes my OBS webcam to lag, and makes other programs slow down when I am trying to record my gameplay. Same happens in NVIDIA Experience. I have i9 10900K and RTX 3080 = this should be simple but its not!
What is the best software to use to record gameplay?

OBS is a bit tricky and recording with it is “not for free”.
You own a RTX3080 (NVIDIA).. I can highly recommend to use Shadowplay which have absolutly no impact at performance. I record 4K in 80Mbit with it.
Of course it has, compared with OBS, limited features in special if you want do more as “single play recording”…

Well, no idea, but also no lags or slowdown of any Programm when using OBS for recording a sim session. And I have a lot of Programms running during a sim session.
AMD 3900x 32gb, 2x M2 NVME, 2060super, 5120x1440 Widescreenmonitor, Recordings reduced to 3840x1080 by OBS.
Are you using nvenc to encode the stream via GPU, or do you use an encoder which uses the processor?

If I use OBS then I use the nvenc ( h.264 new ) and not CPU (x.264) . I see a bit load of OBS, and rare I noticed in-game that OBS is running, but its normaly not an issue. I use it to record e.g. multiplayer sessions, because I have more controll over the audio inputs. But singleplayer games or just also MSFS / DCS / .. I record mainly with shadowplay. It has, as mentioned, absolutly no noticable effect at the performance.

I find OBS and MSFS unbelievable! I have a top spec PC and it cannot even record without losing fps! Am starting to think MSFS is a hog and maybe ill ditch it at this rate! Seems they released it unfinished as it runs like â– â– â– â– . When I close MSFS OBS runs perfectly with other games - losing patience with this sim now.
Have tried Fraps, OBS and even XSplit over the years but been very pleased with Nvidia Geforce Experience recording/highlight/streaming features. I do not use anything else since.

You failed to mention there was some 3rd-party application that is the deciding factor in the original topic.

as said.. it depends at your setting in OBS how much performance you lost ( renderer , etc. ). Not sure why you have in mind that MSFS cause any issue here 
OBS is made for a completly different usage-scenario as shadowplay and it needs performance IN SPECIAL in case that you use re-scaling.
Depend on your MSFS settings, your PC is with MSFS still at the limit and so of course you will notice that OBS is running.
On other side: the normal online-streamer, for which OBS is made, doesnt need 300fps
. Online Streamers which would play without any effect coming from its Streaming tool, use an external PC and capture cards.
But you only mentioned: “Recording” . Thus I assumed you want only Record a video.
Therefore you come off-topic:
we know about that FRAPS cause issues with MSFS ( and others ) … e.g. also its FPS counter. It is just tooooooo old

Haha right, I used Fraps forever ago and it was demanding while recording… I don’t even know if its being supported anymore.
Discovered XSplit which was one that could use GPUs for streaming with little tono impact years ago but their patches started locking features behind $.
Been loving Nvidia Geforce Experience’s recording and whatnot since it’s release.
