In short, would this be a no go?
I’m on a 13400F, 6700XT 12GB, 32GB DDR5, NVMe with a 40mbps wired internet connection.
I’m tempted to try VR and a used G2 is the most affordable option.

You will need to use OpenXR Toolkit to turn down your rendering to maybe 70% of the G2 resolution, or something around there.
I used a 6800XT and could get into the low 40’s but generally needed to have an 80% render scale.
After you “try” VR, you’ll then be “tempted” to get a(n even) better graphics card, so… plan accordingly…
#justsayin, I have no idea what your actual performance will be with this card. I bought a G2 while using a 2070 Super, and immediately upgraded to a 3080TI (before the 4XXX series was released) and was extremely happy, despite the cash outlay…
You will be just fine with that rig. The G2 is still a great headset.

G2 V1 seems to be around £250.
G2 V2 seems to be around £350.
G2 Omnicept seems to be around £325.
Of those, what would be the suggestion please?
I have the omnicept which has extra censors and Tobii eye tracking. Frankly, I don’t use eye tracking (enabled via OpenXR Toolkit with foveated rendering), but the option is there if you want it. Also, somewhere along the line my hand controllers unpaired from the headset, and I cannot get them to pair again. However, I don’t use hand controllers; I use the mouse for switches.
I ran a 6750Xt with G2 and 3600 AMD CPU so similar to 13400 and 6700XT. It works and yes, you have to compromise, but openXR and FSR 2.0 all help. The Sim as a whole is SO much better in VR. Once you go VR, you won’t go back. As to Reverb, still a very good deal. Quest 2 has significantly improvved it’s streaming and Virtual Desktop makes it relevant, and used can be had for $150-200 as a option, Reverb G2 used is $300ish, I even bought one new for $300 from HP EBay site. Go V2 for a closer face gasket even with glasses. I now run 5800X3D and 4090 with everything on Ultra.
Good point. My glasses fit inside the default face mask. I use my “office lenses” (more distance than reading glasses and not as graduated).

If you only Sim, G2 V2 is very good. It will tax your GPU and long-term you’ll end up wanting more and upgrade. If you want to do more than Sim VR, then Quest 2 used with Virtual Desktop is remarkably good for the money, but not better than G2. IT might be worth looking at further, learn more, about Quest 2 because there are so many used ones around. Comfort of G2 V2 is so good you need nothing extra. Quest 2 is not comfortable and you end up getting a bobVR strap and such to make it wearable. I have a G2 and currently can’t see an upgrade that is worthy. I bought G2 V2 brand new from HP Official Ebay store for $300 9-10months ago.

I can’t believe the price difference between US and UK. The G2 V2 is $499 at HP and often on sale for less than that. The same from HP UK is over £700!
At 700 british units, I’d go Pico 4 if you have the GPU to push it. 6700Xt might be a struggle, but you have to think about the long-term plan for your rig. Quest 2 will work and update 55 - 56 have made big improvements and can be had cheap used. Might be a better choice… It’s close to G2 where G2 has a small sweet spot that is sharper, but Q2 is still very good overall. Comfort isn’t a Q2 attribute. Q2 used $200-250 vs 700 pounds, it should be looked at.
I’ve seen an option to buy an unused G1 for not much money at all. I think I’m going to dip my toe into VR with that. Then, if I like it, I can consider Pico (and attendant GPU upgrades) or the G2. But I don’t want to spend circa £300 on the G2 and find I either need a better GPU or I’m not into VR. I could sell it, yes, but that’s all hassle.
If I get the G1 and love VR but don’t like the G1, there’s my answer. I’ll need to upgrade. If I get it and am so-so about VR, I can live with the outlay. If I get it and don’t like it, it’s a minimal sunk cost.
I should say in all this that I’m upgrading from a 23" Full HD office monitor, so anything will be an improvement!
In my opinion G2 is an significant improvement vs. G1 - mostly the clarity in the centre sweet spot. It allows reading the gauges and even the glass displays without leaning in. To me G1 seems like quite old tech (released in May 2019, more than 4 years ago). Even G2 is 2+ years old technology (released in November 2020) but still good for simming if you are on the budget.
I understand that you mean HP Reverb G1, not HP Reverb G2 v.1.
The main difference between G2 v.1 and v.2 is - v.2 has adjustable facet gasket (allowing to make the sweet spot bigger if you don’t wear glasses) and the cable working better with some AMD motherboards.
Don’t expect better image quality in the headset vs. your monitor. The bare image quality will be probably worse in G1 or G2 but you will have the stereoscopy and immersion not even imaginable with 2D monitor. You will be able to look around - this is a game changer, imageine judging your base turn by checking your planned touchdown point or observing the runway through your side window when turning final.
To have image quality better than the full HD or even 4K monitor you would need to spend small fortune on Ponad Crystal or Vario Aero. But this is still ahead of you if you should decide that VR is for you.
