Tonight when I logged on to my computer, the icon to start MSFS 2020 is blank. Neither the shortcut nor the menu works. I tried repair and reset and neither worked. I have restarted and cannot find anything amiss that would cause the program to just disappear. Any suggestions?

Assuming you bought from the ms store, you can open from it there, or hit your keyboard windows key and type “Microsoft Flight Simulator”.

How we rebuild the shortcut, it has disappeared to me suddenly from the desktop.
Very easy, find and grab the FS2020 shortcut in the left menu when you press the windows button, and try to move it to the desktop and it ask you to create a new one as the original, same icon etc..
No it disappeared from there too. Turns out it was a registry problem after the update. Had to completely start over.
