Am I alone when pressing ESC to return the menus, my sim PAUSE for ever when coming back to the plane. No way go further until I return to the world map. I updtade the content mangager, emptied my cache, restarted the computer, nothing works. In fact I can fly normally if I don’t touch the ESC button.

I have not experienced that. I’m on the MS Store version.

I fixed the problem.
When pressing ESC to go in the menus, the sim PAUSE but won’t UNPAUSE when pressing ESC again. So I reconfigured my keys to enter the menus with Shift ESC and exiting with ESC and now it works.
Why is everything in english except for your keyboard commands. That’s odd.
French AZERTY keyboard and/or French Windows, with MSFS set in English (I guess), that’s expected IMHO.
I would expect everything to be in french, but perhaps he changed the language for the screenshot and my benefit 
In any event, it seems you are right and this shouldn’t cause a bug. I’ve no idea why I never encountered this problem.
I use my sim in english only, I hate french translation for the commands, my keyboard is english too. I never had this problem before SU9 but it’s okay, I fixed it.
I have been experiencing this issue when adjusting graphic options and re-entering the sim - it’s like the sim is in active pause but active pause is not actually active. Only tested on C172 G1000 so far… trying to isolate.
After further testing - definitely a key binding issue.
What you did is not a fix, this is a workaround. 
If not logged already, maybe you could do it so Asobo is aware of the problem?

I had a similar issue, but instead of on the menus when trying to quit game. The game stays forever after you pressed Exit → Yes. Menu with confirmation box is displayed and game is freezed.
