Switch between selected and managed mode in a320

Hello,
I have a problem for activating the selected mode for the A320. When trying to change the altitude (the same with speed or VS) there is always an hand appearing at the top or the bottom of the corresponding knob and not the small arrow top or down. What did I miss ?

A similar question about the way for entering speed and altitude to be be managed by the FMS. The input xxx/yyyy is not accepted in LSKR fields. This is a general problem: how to switch from managed to selected mode. I have seen some tutoriels and I have not understood, from what was presented, how to complete this action.

I had this one yesterday. Go to General Options in the game then ‘Accessibility’ and make sure ‘Cockpit Interaction System’ is set to Legacy.

Thank you very much. It works fine for changing during flight but how to enter a flight plan with couple (speed, altitude) to reach at each way point. I guess it is available ?
